I have found Shaffir and Stebbins books (first Fieldwork Experience), now
Experiencing Fieldwork quite helpful with undergrad. first-timers into
the field. Its processual organization (getting in, managing relations...
reflects, in part, students own experiences. I have found it also works
well to include a "data" rich ethnography as well. Many of my students will
be quite unfamiliar with this way of thinking/writing/presenting. Prus and
Sharper's new Road Hustler has worked well in the past. It has a methods
section at the end.
